I love Pumpkin Spice season! Um, I mean Fall. It's that time of year where everyone's flocking to the fields ready to get muddy to find the perfect big orange gourd for carving and where pumpkin spice something is everywhere you turn.
I've been cooking with pumpkin like it's my only JOB these days. I just can't get enough - pumpkin loaf, roasted pumpkin soup, smoothies, you name it, I'm trying it!
I've been making these pumpkin spice energy bites on repeat. I've been talking with my clients a lot about energy bites lately and how helpful they are for pre/post workout or that afternoon energy dip. They're the perfect little snack - easy to make, portable, and, the most important thing, healthy AND delicious.
These little bites are your Starbucks Pumpkin Spice Latte in real food form. The recipe uses all real food ingredients and it's the perfect combination of good carbs and healthy fat which makes it THE best well rounded snack. I've added a little dusting of coffee and cocoa for that little bit extra flavour but feel free to omit it if that's not your jam :)
Pumpkin Spice Energy Bites
1 cup rolled oats
1/2 cup pecans
1/2 cup pumpkin seeds
1 cup almonds
1/4 cup chia seeds
1/2 cup pumpkin puree
1 tsp vanilla
1/4 cup honey
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 tbsp unsweetened dutch processed cocoa
1 tbsp ground espresso coffee beans
1 tsp cinnamon
In a food processor, blend oats, pecans, pumpkin seeds, almonds and chia seeds until they form a mealy consistency. Add remaining ingredients and blend until combined.
Roll into 20 balls
Mix together the cocoa, coffee and cinnamon. Roll each ball until coated.
Store in the fridge for up to a week or in the freezer for 2 months.
*you can also substitute the nutmeg cinnamon and ginger for 2 teaspoons for pumpkin pie spice.*
