Coconut Chocolate Granola

Who else loves chocolate for breakfast?

Did a little experimenting with this coconut chocolate combo because which was inspired by a granola we packed on a camping trip in the summer. ⁣⁣

Store bought granola can be tricky because even though it claims all the goodness there’s often more sugar and sometimes lots of unpronounceables depending on the brand. The easy solution is to make it at home because you control what you put in it! ⁣⁣

It’s a quick process and you can play with flavour a to make it your own as well. This one is definitely a keeper! Great with some yogurt and fruit for breakfast, an afternoon snack, or just straight munching by the handful because it makes those big clusters, that in my mind is the sign of the perfect granola.

Coconut Chocolate Granola⁣⁣
⁣⁣
1/4 cup coconut oil⁣⁣
1/3 cup unsweetened cocoa powder⁣⁣
1/4 cup maple syrup ⁣⁣
2tbsp brown sugar⁣⁣
1/4 tsp vanilla⁣⁣
1/2 cup whole almonds, coarsely chopped ⁣⁣
2 1/2 cups large flake oats⁣⁣
3/4 cup large flake coconut, unsweetened ⁣⁣
1/4 cup dark chocolate chips (optional)⁣⁣
Adjust the baking rack in the oven to the middle rack. Preheat the oven to 325*.⁣
Heat the coconut oil or butter over medium heat in a small saucepan. Whisk in the cocoa powder, maple syrup, sugar and salt and bring to a simmer. Cook, whisking constantly until smooth and the sugar is completely melted. Stir in the vanilla extract. Keep warm.⁣
Combine the oats, almonds and coconut chips in a bowl. Add the cocoa mixture and mix with a rubber spatula until the oat mixture is completely coated with the cocoa mixture. ⁣
Transfer the mixture to a prepared sheet pan and press into an even layer. Bake for 35-40 minutes. Turn off the oven and let sit in the warm oven for 15 minutes. Remove to a baking rack and let cool. ⁣
Once cooled, stir in chocolate chips if using. ⁣
