Blackberry Yogurt Popsicles

Keeping it cool, soaking up the summer while it lasts. ⁣

What better way than with popsicles! Sticky fingers, maybe even purple stained mouths - anything to take me back to feeling like a kid again. And speaking of kids, they’ll love these! Win the parent of the year award by giving them dessert for breakfast - blackberry puree and vanilla yogurt so they not only taste amazing but they’re a good high vibe food. Add a bowl of granola for dipping and some fresh berries and you’ve pretty much got a smoothie bowl on a stick. How fun is that? 😉⁣

Here’s how I made them:⁣

- 4 cups fresh blackberries⁣
- juice of half a lime⁣
- 2 1/2 cups good quality vanilla yogurt, divided⁣

In a blender, blend the blackberries until smooth. Removed and strain to remove the seeds. Add the lime juice, half a cup of yogurt and mix until combined. ⁣

Fill 6 popsicle molds with about 3 tbsp of the blackberry puree. Top with remaining yogurt and then finish with the blackberry puree. Freeze for 20 minute until partially frozen. Insert popsicle sticks in the middle of each mold.

Freeze until firm, about 3-4 hours.
