It's an interesting time of year, isn't it? There’s this push of new beginnings which can be exciting, but at the same time pretty overwhelming. Especially when it comes to living a healthy lifestyle. It makes me sad when people are coming to me feeling so stressed and thinking they need to restrict themselves by going on a crazy juice cleanse or super restrictive diet. And let's talk about the diet industry is putting so much money into making us feel like there's something wrong with us and that we need to look like someone else in order to be happy. 
 
Why has it become so all or nothing?
 
To me that’s just setting ourselves up to fail when we can’t sustain it that super strict diet. Something our bodies aren't meant to do anyways.
 
What about finding the joy in nourishing our bodies with what feels good?
 
What about knowing how to eat to truly feel your best without the guilt or restrictions?
 
How about real, good, healthy food and finding the joy in that?
 
Our bodies are pretty amazing works of science and can pretty easily get back to good naturally - especially when you know exactly how to do that for yourself.
 
Choose the lifestyle, not a quick fix. 
 
This recipe is all that's good rolled into one. Real, healthy ingredients that your body will thank you for. I've used leftover chicken from one I roasted for dinner but you can buy a cooked rotisserie one from the grocery store to save yourself some time. This is also great as a side dish (minus the chicken) with fish or grilled pork. 
 
Arugula, Brussel Sprout, Pomegranate Salad with Chicken
 
Serves 2-3 people 
  • 2 cups arugula
  • 2 cups brussel sprouts, halved and thinly sliced
  • 1 avocado, cubed
  • 1/2 cup pomegranate seeds
  • 1 1/2 cups shredded chicken
  • 3/4 cup Tahini Dressing (recipe below)

Mix arugula and brussel sprouts with a 1/4 cup of the dressing and divide into bowls. Top with avocado pomegranate seeds and chicken. Drizzle with remaining dressing and serve immediately.

Tahini Dressing

  • 1/3 cup tamari or soy sauce
  • 1/3 cup water
  • 1/2 cup nutritional yeast
  • 1/3 cup apple cider vinegar
  • 2 cloves garlic
  • 2 tbsps tahini
  • 1 cup grapeseed oil

 

Combine all ingredients in a blender or food processor and blend until smooth and creamy. This makes over 2 cups, you can easily half the recipe.
