Corn and Zucchini Fritters

If you've never made fritters before, these are the ones to start with! So easy and taste amazing on their own, with eggs in the morning or alongside something hot off the grill.

Zucchini and Corn are overflowing at all the farmers markets right now and if you're lucky enough to grow some at home you're probably looking for some inspiration to use them up. I've added some corn flour (masa) for that extra 'corny' (yes I said it) flavour and dusted them with it to add some extra crunchy texture.

  • 2 cups fresh or canned corn
  • 1 1/2 cups grated zucchini, shredded
  • 1/4 cup corn flour (masa), plus extra for dusting
  • 1/2 cup all purpose flour, unbleached preferably fresh milled
  • 1/2 cup fresh cilantro or parsley, chopped
  • 1 tsp chili flakes
  • 1 egg
  • 1/2 cup milk
  • salt and pepper to taste

It's so easy these days to get overwhelmed and weighed down with all the eating well advice out there. This is back to basics approach to shut down all the nutritional noise to instead make it simple and attainable.


Remember everybody responds differently to food and it's likely your choices will change over time. Guess what? That's okay! None of us should ever feel fearful or stressed about food and my intention is that this will help guide you to instead be more empowered around food.

Apricot Galette

I love this point of the summer. The days are hot and the farmer's market is overflowing with amazing goodies. Apricots being of of my favourites. I love their sweet flavour and soft texture. Even better that they go well in something sweet and stand up really well alongside chicken grilled on the BBQ. 

Galettes are one of my favourite things to make right now because they really are minimal effort for something that looks so pretty. Think of them as a deconstructed pie. No rolling to make a perfect circle for the pie tin and no top crust.....because why would you want to hide the beautiful fruit? If you have a good crust (which I think I've got the full proof one for even the toughest skeptics out there) and fresh fruit, add a handful of brown sugar and you're golden. Feel free to substitute any fruit you find at the market; peaches, plums, blackberries, or strawberries.

Prosciutto Melon Salad

Summertime means serious 'salading'. And I don't mean the wimpy boring kind. I mean letting your creativity go wild and trying some new, fun combinations. It's easy to do this time of year because of all the fresh, quality ingredients at your fingertips.
This is my take on the classic prosciutto and melon appetizer that has the perfect combo of salty and sweet plus two other favourite summer ingredients; fresh herbs and bocconcini cheese. 
It's a light refreshing side you can serve up with anything that comes off the grill, chicken, fish, burgers, you name it! And if you're looking to make this a meal in itself, see the notes I've added at the bottom.

Peanut Butter Chocolate Bliss Balls

Peanut Butter and Chocolate have always been a favourite combo of mine. When I was a kid, Reese's peanut butter cups were always the first thing I ate out of my halloween candy. 
Nowadays, I'm always looking for quick, healthy snacks to have on hand that I can grab and go that also taste delicious. And let me tell you these taste so much better than your average energy bar! 
Packed full good fats, high in protein and fibre these are the best for that quick in between pick me up between meals or a pre workout boost if you're like me and workout in the early morning but your body isn't quite ready for a full breakfast that early in the am ;)
Make sure you buy the best dark chocolate you can. When you go with the good stuff use less of it because the flavour is there, not the crap. Quality dark chocolate has a high cocoa content which means its full of antioxidants, magnesium and potassium.

Make your own Poke Bowl

Poke bowls - so hot right now. You'd expect to see Hansel digging into one of these for sure! Yes, that's me going for the classic cheesy movie reference. If you know me at all, it's what I do so you've been warned ;) 
So what exactly is it that makes this Hawaiian speciality so popular? Well for me, I love how healthy they are - and that they're super versatile so you can find one that has all of your favourite ingredients and nothing you don't. For those of you that are out of the loop, it's basically a rice bowl, usually with some type of raw fish, and vegetables. Think deconstructed sushi. 
Of course had to try to create this at home and found they're actually super simple to make and very little cooking which is perfect for hot summer nights or when the last thing you want to do is cook but you still want something healthy.

Stay Cool Noodles, Stay Cool

It’s summertime and living is easy. I don’t know about you but when summer hits, I’m much more interested in soaking up the heat from the sunshine rather than at the stove. 


Don’t get me wrong, I love cooking and do think about food ALOT (occupational hazard), but when it’s hot out I’m always looking for ways to beat the heat of the kitchen and without sacrificing flavour or good nutrition. 

Enter the cold noodle salad. The only cooking required is boiling some water and some light chopping. This is a great option for picnics or a patio party as they can be made ahead and actually taste better the longer they sit. It's a great combination of healthy fats, protein, and carbs that'll keep your energy up even if that's just to laze around on the beach or in the backyard.

Cauliflower Lentil Turmeric Stew

I do what I do because I want to inspire you to get in the kitchen and learn that eat well doesn't have to be hard. There's this misconception that cooking is complicated. Is it really or is that a story that you're telling yourself because you haven't really learned how to do it? It starts with some basic concepts and having the right attitude to make it fun.

This stew is the perfect example of a basic recipe that you can play around with to make it work for you. It's full of the good stuff, easy to prepare and full of flavour. Nothing boring in my kitchen! Once you've made this you can try different things like adding fish, chicken or tofu and different vegetables to mix it up. I love the colour the turmeric adds. It looks like summer in a bowl. I also found the best hack; Turmeric Paste. It's a great time saver as it'll keep much longer than the root itself and will stay fresher than the powder.

Egg and Avocado Boats

I'm always asked what my go to's are for quick breakfasts. These are right up there with my overnight obsession. And how can you go wrong with eggs and avocado, right?
Simple to make and the best thing is you can make them on Sunday and eat them all week for breakfast or a quick snack. Change up the toppings if to whatever you like, spinach, mushrooms, fresh herbs, goat cheese....the options are endless!
Egg and Avocado Boats
  • 2 avocados, peeled and thinly sliced
  • 8 eggs
  • 8 cherry tomatoes chopped
  • 4 slices bacon, cooked and crumbled (optional)
  • Salt and pepper to taste
Preheat oven to 350*
Place the sliced avocado evenly into 8 muffin cups of a muffin tray. Crack the eggs into each cup. Top with sliced tomatoes, crumbled bacon, salt and pepper.

Lemon Chia Seed Muffins

Lemon and coconut are one of my favourite flavour combos right now so naturally when I saw a this recipe from the amazing Donna Hay, I had to experiment and came up with my own version to of course include coconut. Adding chia seeds give these a little bit more texture and the coconut butter drizzle cuts down the sugar without sacrificing flavour. 
And before we go on, yes these have regular white sugar....Gasp! Here's my motto this. Everything in moderation, even moderation. I believe that if you eat in a way that you know is balanced for you (but the basics are eat lots of fresh, real food), having a little bit of sugar here and won't  ever ruin your healthy lifestyle. These have all kinds of goodness in them and if you pair with a smoothie, green drinks or a nice fruit platter you've got yourself a nice healthy plate.
